Danish pølsebrød - Food for Friends

Last weekend, before the case-writing-marathon (Ok, it wasn't that hard but I had no time for other stuff) I made Dansih pølsebrød. That is hotdogs in bread. Here is how you make them:

First make a dough for white bread, here is a recipe I use:
(for 20pc)

25g yeast
1dl lukewarm water
50g melted butter
1dl yoghurt
1 tsp salt
1 egg
~450 g flour
Mix the yeast with the water and the butter with the yoghurt. Then put the butter mix into the watermix. Add salt, egg and flour and mix it well together. Ferment covered for 30min.

Then devide the dough into two and make them round. Roll out so you have a flat circle and slice it into 10 "triangles". Put a hotdog on the wide side of the slice and roll the dough around the hotdog. Place the hotdogbread with the tip down on a baking tray and let them be for 10 min. Brush the breads with milk or whipped egg and put them in the oven for about 20 min or until they have gotten some color. Done :)




They are perfect for picnic, in the lunchbox or as a snack.

Food for Friends - Apple Pie

This is (as the rest of the Food for Friends-recipes) a very simple apple pie that is called smulpaj in Swedish ("crumble pie").

This is what you'll need and how you do it:

About 2 apples (or other fruit like raspeberries, blueberries, sliced bananas)
100g butter (NOT melted!)
1,5 dl flour
1,5 dl oatmeal
0,5 dl sugar
If you want you can add some syrup and/or cinnamon in top of the apples. If you use bananas you can put some cocoa (powder) on top.

Peel and slice the apples and put them in a buttered form. Drizzle syrup and cinnamon on top of the apples.


Then mix the other ingredients in a bowl, using your hands to make "crumbles", and put them on top of the apples.


Let the pie be in the oven for about 20min (200deg C) or until it has gotten some color.
Serve with vanilla ice cream or vanilla sauce.

Ready to be served!

Food for Friends

After a summer with a lot of BBQing, picnics, eating at restaurants or at friends, Food for Friends has finaly returned ;) Food for Friends is the food part of my blog and contains recipes that are easy, quick and fill a lot of stomachs. Today I will show you a super easy recipe of a broccoli soup that I tried last week. I love soups because they are easy to make, usually not that expencive and are perfect now when we are getting closer to the colder season.

Super easy broccoli soup
This is what you need for 4 persons:

1 onion
2 potatoes
250g broccoli
12 dl boullion (I would take less water for a more creamy soup)
2dl cream (not whipping cream, but the one for cooking/food)
salt and pepper

Peel and slize the onion and potatoes. Chop the broccoli into pieces.
Boil the bouillion and add the vegetables. Let it boil for 10 minutes. Blend the soup with a hand blender or a food processor. Put it back in the sauce pan and add the cream.
Warm it til it boils again and add salt and pepper. Taste. Done :)

Serve as a starter, or add i.e. bread on the side for a main course. You could also add fish, shrimps, creyfish/lobster tails, whole pieces of vegetables or even chicken for a more filling soup.

As I wrote before, broccoli is a super vegetable with a lot of vitamins and antioxidants!

Food for Friends

I know it's only about a week since I made a food-post, but I think that this one can be good for the weekend brunch and the post ends with a cute video for a Friday smile :)

Banana pancakes! You guys over in the US probably know how to make them, but it's not something every European has tasted.

And what fits better than this song with Jack Johnson:


So, get in the kitchen, turn up the volume and start making some:

American banana pancakes
~ 8pc big using 1dl dough

2 tbsp melted butter
1 egg
2,5 dl flour
2,5 dl milk
1 tbs vanilla powder
2 tbs baking powder
2 ripe bananas
1 tbsp sugar

Whisk the egg into the melted butter to a smooth mixture.
Mix the dry ingridients in an other bowl.
Alternate between flour-mixture and milk into the egg-mixture.
Mash the bananas and fold into the dough.
Take 1dl dough and fry with some butter on middle temperature and flip when you see bubbles. (The smaller ones are cuter, but takes long time to make..)


We gave one to Charlie the dog but he didn't really get what to do with it... Strange texture! It ended with me, tearing small pieces of and feeding him, but then he couldn't get enough :)

Food for Friends

This time in Food for Friends, I will give you the recipe of a filling chicken soup that is full of antioxidants!

Short version for you who don't know what antioxidants are: Oxidation is a reaction in the body wich can damage cells. The antioxidants protects the cells and can prevent cancer and coronary heart diseases. Read more here (Wiki in English) and here (Nyfiken Vital in Swedish).

It's perfect if you have some friends coming over and you can just substitute the chicken and vegetables for things you have at home. The soup is quite spicy and can increase your fat metabolism, so with other words; a super soup!

Spicy chicken soup
(for ~3persons depending on how hungry you are)

½ onion
2 garlic cloves
1 tbsp oil
1 big chicken fillet
2 tbsp chopped fresh ginger (you can probably use powder aswell)
3 tbsp sweet thai chili sauce (or 1 tsp sambal oelek)
5 dl water
1,5 boullion cube
2 dl canned coconut milk
100 g brown rice
1 red pepper
~70-80 g broccoli

Cook the rice in a casserole of its own. Chop the onions and fry them in the oil in a pot.
Chop the chicken in pieces small enough so they can be eaten with a spoon but not too small so they get dry. Put them in the pot and fry them for some minutes.
Put ginger, thai sauce, water, boullion and coconut milk in the pot and stir. Let it boil/simmer for 15min.
While you are waiting, chop the pepper and broccoli (or some other vegetables).
Mix in the vegetables and the rice. Taste. Eat :)


Not only does it taste super delicious but you can almost feel how good it is for you!
*Red peppers contains not only antioxidants but they are also one of the vegetables containing the most vitamin C. Futher they consist of vitamin B6 and fibre.
*Ginger is one of the spices that contain the most antioxidants, and if you look on numbers of antioxidants per gram it is the food that conatins the most. It can also be slightly anti-inflammatory.
*Broccoli contains a lot vitamin C, K, A and fibre. There are also vitamin B6, B2, E, B1, B3, zinc, potassium, magnesium and iron.

Have a lot of ginger and/or coconut milk over after making the soup that you don't know what to do with?
-Put sliced ginger in your water together with a little lemon for a fresh summer drink.
-Replace ordinary milk in other recipes like pancakes or scones for some coconut-flavour.

Food for Friends

You could not belive how many food blogs there are out there. You could try and search food blogs at Google and the first 6-7 something hits are just communities or vanues for food bloggers. Then try in your own language and you will get at least as many. Not to mention all the allready established recipe-sites. I don't follow any food blogs (yet) but I do use the Swedish recipe-sites Recept.nu and Tasteline for inspiration and for look-ups.

So what is a food blog? Well quite simple, it's what it sounds like; a person that blogs about food. Some make their own recepies, some just post what they had for lunch and others come from magazines or tv-programmes. Oh, I do follow one. But it's more of a nutrition blog. Elsa writes (in Swedish..) about the good and the bad stuff in vegetables, fruites etc. and how to use them in the best way. She also writes about how to buy and cook food with as small an impact as possible on the environment.

Ok, so I thought I should give it a try, since I love (hm, maybe not love, love is a strong word, more like very much) to bake and cook:

Today you will get the recipe for my chocolate cupcakes I wrote about before.

Chocolate Cupcakes
About 12pc

2 eggs
2,5 dl sugar
100g butter (melted)
1,5 tsp vanilla sugar
1 pinch salt
4 tbsp cocoa (or 5-6 of the powder you use for chocolate milk, like Nesquik)
2 dl flour
1 tsp baking powder

Whisk eggs and sugar into a porous mixture. Mix the rest of the ingredients and whisk to a smooth dough. Put it in the cupcake cases (almost to the edge).
Bake at 200C in the middle of the oven for 10-15min (depending on your oven). They should look like they are not done, in that way they will get chewy and creamy.
Let them cool down. Done!


For you who don't bake because the kitchen gets nasty and there's always plenty to wash afterwards, think about it. For this you need something to mix the things in and something to whisk with, not that much huh? And these are perfect if your friends are coming over or maybe your parents, and you have nothing to serve. They take about 30min in total to do and are made of things you almost always have in the kitchen!
